Recipe Recommendation: Honey and Greek Yogurt Zucchini Bread

Happy Sunday!  I use Sundays to plan and prepare for the upcoming week.  I have been asked so many times about the resources that help me plan a full week that I decided to launch the “Planning the Week” feature with three concomitant components: a recommended book to make your commute easier; a healthy recipe to make your week tastier and healthier; and a planning/planner tip to keep it all running smoothly.

I seem to have developed a slight obsession with Valentina’s baking website, The Baking Fairy.  I know I keep saying that this feature is about helping find healthy recipes to items that can be used throughout the work week.  I know I have been failing at that but guys, I’m pregnant.  Can I get a break?

For those of you who are kind enough to give me a break—all others, you can just stop reading now, meanies—I still wanted to be a little bit healthier and practical this week than I have been lately.  One thing I love are morning loaves—instead of just toast, having a slice of banana bread or a vanilla loaf just sets me up for an even brighter day than anticipated.  I also love loaves that feature zucchinis as a key ingredient—there is a moist factor that zucchinis add that can’t be beaten.
